What you need to make 10 pieces (5 servings):
1. Corn fritters
2. Yoghurt dip
In a medium bowl, add the ingredients in this sequence: Flour - baking powder - salt and pepper - egg - milk - oil - chili - spring onion - coriander - corn. Mix well after every addition of ingredients.
On a lightly oiled pan with medium flame, scoop a spoonful of batter into the pan and press lightly to flattened.
Fry the batter until golden brown on both sides.
Prepare the yoghurt dip while pan-frying the corn fritters. Mix all ingredients evenly and set aside.
Ensure both sides of the fritters are evenly brown. Rest them on kitchen towels to remove excess oil.
Serve and enjoy.
- Swap the chillies in the recipe for capsicum for a sweeter flavour.
- You can also modify the recipe by adding shredded carrots or other vegetables for variety.
- The yoghurt dip can also be used as a salad dressing
- Pan fry method use lesser oil as compared to deep frying. Alternatively, you can also bake/air-fry for crispy texture
